How to make hot chocolate bombs using a polycarbonate mold

Huafeng polycarbonate molds are among the most rigid and durable options available for working with chocolate. They come in a wide variety of shapes, allowing you to create everything from full-sized chocolate bars to intricate miniatures. While these molds produce slightly smaller pieces compared to those made with silicone or 3-part molds, they still fit perfectly into a standard-sized mug and are spacious enough to hold plenty of fillings.

For making traditional hot chocolate bombs, you'll need dome-shaped molds, which are available in several sizes. In this tutorial, we’re using a Huafeng mold that creates 2.5-inch (63mm) diameter spheres. The manufacturer refers to this size as “large.”

These molds are commonly used by professional bakers and chocolatiers, and they are the most expensive option among the three main types. However, their price reflects their superior durability—making them ideal for repeated, long-term use. Thanks to their rigid structure, you can easily scrape off excess chocolate without damaging the finished shape inside each cavity.

Why Won’t My Chocolate Release from the Polycarbonate Mold?

This is one of the most common issues when using polycarbonate molds. As chocolate cools and solidifies, it naturally contracts slightly, which helps it release from the mold. This contraction occurs with real chocolate and, to a similar extent, with compound chocolate—although the fat composition is different, the behavior is often quite similar.

If you're having trouble getting your chocolates out, it's likely because they haven't fully set. When I first used these molds, I struggled to release the chocolates too—until I realized I simply hadn’t waited long enough. Patience makes all the difference.

Still stuck? Try placing the mold in the freezer for a few minutes. Once the chocolate is completely hardened, you’ll find it releases effortlessly—it’s almost funny how easy it becomes when properly set.

 

My Chocolate Melts in My Hands! How Can I Prevent This?

Warm hands might mean a warm heart—but they’re not ideal when working with chocolate. If your chocolate keeps melting as you handle it, you’re not alone. A few simple tricks can help:

  • Chill your hands before working—some people keep ice nearby or rinse with cold water.

  • Wear gloves, which act as a barrier and reduce direct heat transfer.

  • Minimize contact—the less you touch the chocolate, the better.

Keep in mind that compound chocolate has a higher melting point than real chocolate (which melts right around body temperature—that’s why it melts so perfectly in your mouth). Use that to your advantage. When removing chocolates from polycarbonate molds, release them directly onto a cool surface, and use silicone muffin cups or parchment paper to handle or move them without direct touch.
